I know a lot of teams have expressed interest in eliminating the off days. I agree it leaves a lot up to chance and teams can lose starts from their pitchers.
Here is my proposed solution to eliminate off days if it is possible on the Fantrax system.
We can make said days, like the light Mondays and Thursday that it seems to always be, part of a day 2 period set that would count as one game. This would give all teams a chance to have a starter for each match up. Let's face it there is a lot of chance involved when rotations switch due to rainouts etc. At least would eliminate the chance of off days making it the reason. This is one idea we can explore.
Another idea is to allow for when a team does not have a SP going at all on a day to allow them to start an additional RP on top of the current 3. Not sure if this is possible on the Fantrax system either, but it would give teams a chance to be more competitive day to day even without a SP. One reason I propose this is because there is a cap on how many SP you can have.
Just a few ideas for now. Will post more as they come up.

The SP position could be changed to a P flex position, which would make your second proposal good.

Why not just do 4 flex P positions instead of any SP or RP designation with the caveat that you get one start per day. You might say it will be hard to police but I would say it's up to the other team in the matchup to do this. I mean, I certainly would make sure my opponent only had one start or I would raise hell lol the flex P would also eliminate the SP/RP designation fiasco we have to seemingly deal with on a weekly basis.

In addition to making sure your opponent only had one start the other monitoring piece would be making sure each team only has 6SP on their MLB roster. With a P designation for any pitcher it makes it much harder to monitor that.
If we can come up with an easy to monitor and record system--I think that a on days we have more than one SP going we could have the points for one pitcher count for the actual day they pitch and the other pitchers stats could count towards the next day if the team does not have a pitcher going. This would obviously have to be stated ahead of the games and recorded somewhere and then a commish would have to manually enter the points into the next matchup.

What about mixing two ideas? 1) Get rid of the off days plus 2) Change the pitching positions to SP/RP/RP/Flex. This way we reduce the number of SP not used significantly without too much effort. Of course teams with 2 SP on one day will have an advantage but in my opinion there is always luck involved in daily leagues. Keeping track of the SP points manually won´t be fun...
This way teams with deep rosters will be rewarded on days with not a lot of games being played. Also the number of SP performances not being used will go down significantly (as stated above). And we will reduce the number of doubleheaders. I love those doubleheaders but when you take a close look teams with no SP on a doubleheader day have a huge disadvantage and this definitely shapes the rankings in a wrong way. Very quickly you have a 1-5 weekend and find yourself in a deep hole.

I disagree with New York's solution. That's puts even more luck on the days that some people that are lucky enough to have SP on both days.
My solution is to just move the starters points to the next available day the team doesn't have a SP in the lineup.
That's simple.

My solution is to just move the starters points to the next available day the team doesn't have a SP in the lineup. That's simple. that's not simple at all. What if that day is like 3 weeks away .. I actually think changing this part of the rule is too big of a change . - I think starting 1 pitcher per day rule is a great rule - I like the idea of eliminating the off days but still keep it at a 1day matchup - If you have 4 pitchers going on the same day too damn bad, should have taken 5 pitchers from the same team

I think that would be extreme. Most of the time it would be the same week.

If we changed to carrying starts to future days I think I would want it to stay within the same series--so that is even shorter period than a week.

off days--
As of now I know we cannot group 2 days into one game randomly throughout the season. The daily game format is one of the strongest parts of this league so I don't think we want to go to a weekly or 2 game a week type of system.
The reason for the off days is that on those days there is not a full slate or close to a full slate of games. I would propose that we make a decision on what is the minimum amount of real MLB games that need to happen on a day for us to decide we want to have a game scheduled.
